While MGS4 and V have better mechanics, they also have shitty level design, and don't actually end up using them. 3 uses its mechanics to the fullest.

I get that release order is th best for MGS but I feel like playing Peace Walker before 4 is pretty alright.
3 is the origin story that takes place in 1964 you could easily start with that

4 should be done an act per day, otherwise you'll fall asleep in the briefings.
Peace Walker is a great primer for the V style of gameplay that I recommend you give a go to be honest. The plot is somewhat essential to understanding V.
