The Etrian Odyssey series is excellent for the most part.

I don't really care about the setting as long as it's grid movement and turn based combat, no real time shit please

I have nothing else to say since I know nothing about grid-based games, I just like dragons.

If you want to go off the deep end, start with 1 since EO is one of the series that makes it hard to go back to the older games, if only for QoL improvements with each successive game.
If you just want to dip your feet, I'd say go for 3 or 4. 3 is an excellent game, if a little broken. 4 is a bit more polished, but also the shortest and easiest game in a series that prides itself on length and difficulty.

I don't! It's fucking awful and cumbersome. I just want simple, turn based combat. I move, they move, I attack, they attack

I've been playing first person dungeon crawlers for a long time and the only turn based one I enjoyed was Shining in the Darkness. Etrian Odyssey is good for mapping, but the combat kinda sucks (maybe it was just too difficult for me).

Some suggestions I guess:

The Dark Spire
+Great art
+Awesome music
+Good dungeon design with lots of traps and puzzles
+Its basically Wizardry
-It's basically Wizardry
-Will require configuration of Nintendo DS emulator (MelonDS 0.8 plays it perfectly).

Sword of the Stranger:
+Neat battle system
+Interesting setting
-Dungeon design is large but lacks good puzzles and stuff
-Weeb shit

Elminage Gothic:
+Some damn fine dungeons
+It's Wizardry 1 except there's a lot more of it
-The game hates you and wants you to suffer

Might and Magic Worlds of Xeen:
+Super comfy oldschool RPG
+Absolutely gigantic world filled with stuff
+Feels like some proper high adventure RPGing
-Requires DOSbox to run
-Not very challenging
