But without the piss poor combat
Looking for some RPG/RPG-lite games, with either 1st or 3rd person combat, with dungeons to explore, some lore and quests, stuff like that. From the last 5-10 years.
Anyone got any good suggestions?

Dragons Dogma, easily
OP asked for good suggestions. Emphasis on the "good".
Arx Fatalis
...
Dragons Dogma is good, but if you don't like it maybe one of the latter Dragon Age is more your speed
I did play Dragon Age: Origins and liked it a lot, but I remember 2 being dogshit.
There's Dark Messiah but it's a fairly linear game.
I dropped Dragon's Dogma at Gran Soren. The environments are really good, so's the gameplay but it's so fucking bland. There's something about it that just completely bores the shit out of me.
Dragon Age Origins is really good, Dragon Age 2's okay-ish to some degree and Inquisition is complete dogshit.
The begining of the game is an absolute bore fest, that's true. It only gets interesting much later.
Sequel when?
Sadly never, Arkane got pozzed to death.
That's nothing like an immersive sim.
Outward. It's got camping/survival aspects baked in by default. Has an emphasis on multiple playthroughs with a "legacy" system that allows you to pass on a few items to new characters you make. It's also one of the very few modern games with the ability to run splitscreen.
OP never asked for one
Suggesting that DD is like Oblivion is some disingenuous shit
There's a UE4 remake in the works. Check moddb.
see
This. Also the soundtrack is god tier.
He asked for game like Skyrim/Oblivion but without the shit combat. DD is barely anything like the aforementioned
There are not much games that fit your description. Grimrock 1 &
2 are great games.
