To be fair, Splatoon 2's online data is saved locally. So you could upload your save to the cloud, reroll gear and if you don't like the results, delete your save, download it again, and then repeat until you got what you wanted.

but you can do the same thing in Xenoblade 2 with core crystals, which they tried to prevent by having the game autosave when you open a crystal. But I guess Xenoblade 2 isn't an online game so they don't care if you savescum to get better blades.

because it clashes with the whole portable aspect and the direction of animal crossing. Also Animal Crossing is not developed by Gamefreak and they are actually attentive to the (Japanese) fanbase. Note all the quality of life shit, being able to choose where your houses are, furniture outside, grass deterioration gone.
Animal Crossing is practically a system seller at this point, they wouldn't bother delaying it if they didn't give a shit about it.

One of these is a company that has always had an issue catching up with online systems still having an issue catching up with online systems

I just hope they at least considering compromising by letting you have emergency back-up saves for the town and villagers itself with all the items wiped out. That's what people care about. Why should they let you adjust the clock from in-game this time? It made sense in previous titles because accessing the system settings required you to quit the game, but the Switch's settings are easily accessible when a game is suspended.
Transferring stuff to another Switch is really easy compared to previous systems, but stuff like screenshots and Miis won't be transferred so you need to be careful about that. With photos screenshots you should just buy a microSD and move them all there, then put the microSD in your new Switch. Transferring Miis is super easy provided you still have the console they were originally on.
Everything else transfers just fine though, you just need to redownload digital titles and DLC from the eShop.
