XI is really good so far. It's the first DQ I started with. In terms of content, the switch version will be the best when it comes out. In terms of graphics, PC is the way to go. And the ps4 version is just bad

For example, the male protag of IV is Solo, while the female protag is Sofia.
V is called Madason, as that's the name the character's mother would say she wanted if you don't input it as the name.

I didn't need need to look at a guide much, granted the mobile version has an in-game world map that makes it a lot easier to get around since it tells you where towns and dungeons are. Only needed a guide twice, once because I didn't get an item from a dungeon I thought I had fully completed, and another because I couldn't figure out how to get to a certain town.

Well honestly DQ can have that, but I don't think it's that often that it gets that complex. I've played them all and really only post game bosses give you that rush. Maybe if you play 11 on harder monsters and few other modifiers (no buying items, no running away from battles, no armor, no exp from easy fights) then it can give you that rush of tense situations. Maybe since I've played them all I find them easy? Well not too easy, but not as challenging as I think Darkest Dungeon would be. Just try one of them out and see for yourself. Go for 3, 4, 5, 8, or 11.

Because it's weird to say how many games you've played to completion with that one since I've only beaten one mainline game, IV and the rest were spin-offs like Devil Survivor and Persona when most other people beaten all the mainline with other spin-offs.
In terms of Dragon Quest I'm finished with the Zenithian trilogy and am around 46 hours into VII on 3ds with a bit of VIII played and I plan on buying 11S day 1 like I have every other DQ so far. I got pretty far into the original DQM as well but don't think I'd finished it along with Joker 1.

Honestly, it's fine.
What you're missing from the SNES version are:
- Animated enemies in battles, on mobile they are static sprites
- Pachislot, a minigame that appears in a few locations that's like a board game. It's fun, but mostly RNG. You can get some strong equipment from it, some of it you are limited to one copy without this minigame, so in a sense, not having it makes the game more challenging.
But what it has over the fan-translation is an official translation that is more consistent with the rest of the series, and is more professional in general (For example, if you name your hero with more than 4 characters in the fan-translation, only the first 4 will be displayed during battles. In the official translation you'll actually see your full name.)
Party chat adds a lot of character to the party members. You don't HAVE to play the mobile version, but you'll be missing out on that.
I wish that project to port the party chat to the DS version hadn't fallen through.

SMT unfortunately has the whole git gud mentality ingrained in it, when most of the games aren't even particularly hard. DQ fans are just happy if anyone plays one

The big difference is that SMT is filled with vindictive people that are pigeonholed by Persona encroachment and yet act like they're sitting on the best JRPG franchise ever. Difficulty is their bread and butter, and if you can't accept that then you can go rot in a ditch. DQ is in a case where the series doesn't get as much attention in the West as the fans think it should, on a whole general degree rather than just spinoffs or side games, and thus they're much more open in arms about newcomers because it's so easy to pick up and play, yet dedicated to master.
It's like how the Trials of Mana remake suddenly has a huge shift of Mana fans coming out again, even as they admit the series is far from perfect, and i've seen a lot of people welcoming newcomers into the fold simply because Mana doesn't get the love it deserves.
this game is literally all i've played of DQ in it's entirety. I enjoyed it even if it could get tedious as shit and kind of hard to navigate properly during the end run. Nice blend of fun, humour and sad shit all around.

DQVIII on the 3ds removed so much detail on the overworld that it feels so empty. It really irked me.
My best memories with the original was exploring the huge and beautiful overworld while the epic overworld music played.
I wish there was a proper HD remaster of the game but with the 3ds content added and bringing back the international additions like the orchestral music and better ui.

The overworld was filled with rare monsters and secret areas and you actually had to search for them. For a ps2 game it was one of the best looking games of it's time.

How do the GBC versions of DW1-3 hold up? Does the tiny screen mess anything up? SNES looks nice and all, but GBC aesthetic looks comfy.
They're perfectly fine really, and easier to acclimate to than the NES originals. Sure the graphics aren't SNES tier, but the SNES games were used as the template and they even have monster battle animations. The tiny screen just means it's easier to get lost by having less of an overview of your surroundings.
They hold up fine. SFC 3 is a really good looking game though so you'd be missing that. Personally I think 1 and 2 GBC look the best for those two though.
The only thing "wrong" with them is that the mobile remakes and the rest of the series have changed some of the names and have been consistent with those changes throughout the series, but the GBC games use the original Japanese names, so you might miss some references in the future when newer games references something by the localized name. The two I remember is Loto instead of Erdrick and Lora instead of Gwaelin.
Go play V and have fun. It is THE DQ game
I like the 3ds version because there's a cheat code to reset your skill points. That way I can try every weapon without having to replay the game over and over. And no worries about picking the wrong skills.

I wouldn't call it best, just I can easily change it on a whim. When doing story, I switch to boomerang skills, when grinding metal slimes, spear, when fighting bosses, sword.
DQ appears to have inconsistent localizations period, so missing out on references that aren't the obvious Roto/Loto/Erdrick mishandling seems par for the course.
