I can tell the difference between 120 and 144 if I compare them right next to each other but I probably wouldn't notice if my 144hz changed to 120hz.

The difference between 60hz and 120/144 is almost comically obvious.

No you won't. You would notice the changes to the monitor elsewhere first. Like running a 144 at non native refresh or two separate monitors and how they handle pixel refreshing.

"resolution" isn't the question. 2160p on a 200 inch screen will look worse than 2160p at 100 inches. The question is ppi, and in most cases 2160p at reasonable distance is hitting the level humans can't discern in acute situation. Since most people do sit closer than recommended with screens larger than their area can accommodate, 2160p isn't there yet. Something like a 30 inch 2160p monitor is 150ppi. At 5 inches from your face you would need 1800 ppi for perfect clarity with perfect vision, so you need to have the resolution be 15x higher, or back up to about 20 inches where the attentive clarity required at 20 inches away drops to a more manageable 900ppi

So a 30 inch 8k display at 20 inches distance would be prime, if you have top eyes

There is pretty much no limit if you consider how crappy displays are compared to a vision system. Our eye sensor "trigger time" can start on any frame on an infinitesimal time scale. And the light acquisition time from reading in light and sending the information to the brain can pretty much be 50000 hz if it is close to how modern low light sensors work.
