If you currently have Merlin and plan on buster chading for the rest of the game Jalter, Hercules ect are better options

That's true. However, a 5* servant will have better stats at 100 than a 4* servant will, so if you're grailing all the way it's better to do it with a 5* from a pure stat perspective.
Plus, a lot of people tend to use their 5* servants more than others of the same class, so if it's someone you're using most often then you'll benefit more often from the grailing.
