Ponytail is visual shorthand for telling us the character is a bit of a loner that likes being out of civilization and off the grid, but has a sense of purpose and determination.
The hair is not neatly trimmed, but left to grow wild. And yet the character has tamed it by bunching it together.
Kind of a metaphor for the whole chatacter, really.
