I like that he was scary. Every time he was onscreen it was tense, and even just the buildup to him was frightening. I'm a little worried the remake is doing him a disservice because the presentation of the original was top notch. You get shit like impaled president, impaled cobra, gigantic bloodbath...and then when Cloud finally talks and you see the guy, he's on your side. You get to see that spiral into madness as his theme kicks in down in the basement and from then on its a wacky fucking ride.

I don't think FF really did an unsettling/spooky villain like him ever again. Nobody else has that aura, he's like a Resident Evil antagonist or something.

Everything Sephiroth does is in service of his goals to summon Meteor and become all-powerful. Fucking with the guy who's getting in your way is different than having an obsession. The reason he even wanted Aeristh dead is because she was summoning Holy. Getting Cloud to do it is cheeky but would have been easier than going down there with a Jenova clone. Cloud himself is pumped full of Jenova cells (no different than the hooded figures taking part in the reunion), and had already been mind-controlled to hand over the Black Materia previously.

The point is, FFVII Sephiroth had a grand plan that Cloud happened to get involved in, KH/Compilation Sephiroth is very petty by comparison.

Keep in mind that isn't even the real Sephiroth, it's one of many Jenova doppelgangers running around. The Jenovaroth and Cloud are basically the same thing from his point of view, both tools at his disposal. Cloud doesn't work so Jenova is used as a back-up.
