This is true and it does irritate me.
That being said, I'm pretty sure the graphical quality/bloom is due to it being an E3 showing, many first looks at Switch titles have extra bloom and more basic graphics.
It's a disappointment that it doesn't look as good as the MK8 track, but at the same time I feel like it's more important to add more interesting, varied gameplay than to focus on the graphics, as long as the graphics aren't as bad as Sword and Shield.
