As far as i know and don't take it as gospel only the graphics are updated. Meaning gamplay will rape you at one point or another

Last time i mentioned TLR there was also some guy recommending me Saga games.

Same staff, it's pretty much a saga game in concept and mechanics, except this one feels more like war/battles.

The remastered is basically the game ported to UE4, there's some new visual effects like reflective surfaces in some places or some materials having new properties like metallic etc., the game was also retextured and it has some changes to the ruleset that went back to the 360's standard, I believe there should be a list on Gamefaq?
Either way, it's not worth your money as people reported long loading times and lag on the Switch version and the game runs at thumbnail resolution and 30 FPS, stick to PC and install the ENB patch if you want a similar visual overhaul.
Also play the other SaGa games as other people already told you, you're doing yourself a disservice and will miss out on a lot of those tasty SaGa references in TLR, which will make the lore even more fun.
SaGa Frontier 2 is easily one of my favorite games.

I'm currently playing Romancing SaGa 2. Romancing Saga 3 and Scarlet Grace ports will come out later this year, I think.

Apparently PC is still better, it's using a new version of unreal engine but the frame rate suffer for it (or so I heard I haven't played it), the game might look slightly better but you can just modify everything on PC using the config.ini files.
The only reason you would want this one is if you use your Switch as a portable console during travel.
There is no new quest or characters at all.
So where do i start then? Romancing Saga on ps2? I don't have Vita fo RS3 though.
It doesn't matter, user. SaGa games are like Final Fantasy. There are some references, but they are not connected (like sequels).
If you have PC, PS4 or Switch you can get Romancing SaGa 2 there. RS3 and Scarlet will come out later for PC, Switch and PS4.
Both PS2 games are pretty tough, Unlimited especially, but I assume you know TLR inside out by now so you shouldn't have too many problems.
SaGa Frontier is better than either of those for beginners, so if you're having problems with Minstrel Song consider that game as a way to get into the series proper, the DS remakes of SaGa 2 and 3 are fine too.
Romancing SaGa 2 is also an option but it's one of the harder entries so be advised, RS3 is better for beginners, and don't worry about owning a Vita, it's also coming out on PC/Switch and whatever else outside of the 3DS.
