They have. The "platform fighter" genre literally exists just for that. Rivals of Aether fucking rocks, it's described as "Melee but on purpose". The real reason is that Smash Bros isn't just it's gameplay.

Oh, you're only at the beginning. They rethink what they want the main plot to be about five times before you reach where the series currently is.
The magical school is legitimately the best of it. It's all downhill from here. Even the fight scenes, since the one guy who made them all amazing fucking died after V3 finished being animated.
They kept one completely choreographed fight of his in reserve for three seasons just so they could end on a high note in volume 6; so you have that to look forward to, at least.
