Most of what you mentioned only applied to Season 1 and 2. From S3 (Universe 6 Tournament) they generally settle down.
Trunks was a TV special, they had more time and budget than DBZ at the time, and was also focusing on that scene as a major part of the story, of course it looks better.

GT is flawed, but I still love it. But Super is a very nice pace of change and I binged the fuck out of the dub after the sub ended. Mix that with me finishing off Z entirely and it's safe to say Dragon Ball is really doing a lot.
