Why am i not surprised

WoW made it so green always has to be "okay" and purple always has to be ideal. Red is special in some way, cursed or maybe one of a kind artifact etc.

Some games do. Others use rarity colors for other purposes.
For example, WoW used to have "item budgets" for stats on a piece of equipment, with higher rarity getting more points than more common items. So epic purples were better than pleb blues, even if the blue was slightly higher level. Nowadays it's item level all the way, with the color being pretty meaningless since everything's purple. Which is good, because if WoW used new colors for each tier it'd have ran out of visible spectrum already.
Different example. FFXIV uses "rarity" to show where the item's from. Whites are crafted or bought with gil (money), pinks are mostly solo content drops, greens are dungeon drops or crafted from dungeon drops, blues are raid drops or bought with raid currency, and purples are from longass quests.

Objectively speaking, if there's much more than 3 rarities, it will get hard to keep track of which color is better than another, since the assignments are arbitrary

I prefer a combination of color + symbols, like so

Orange is legendary in all cases
Pink/light blue are special tiers above legendary
Purple is "epic" (stupid rarity descriptor imo)
Red is flavor text
Yellow is for boss items
White is common, bottom of the barrel
Blue/green is a toss up of common and uncommon but it is irrelevant because I will never use a common/uncommon item unless it is unique[/spoilerp
