The theory that it was her sister's favorite is interesting and entirely possible, but because of the origin of the item in question, I think it's kind of unlikely.
Her favorite food in Driver form, Cream Orange Paratha, is an item you can buy in Torigoth. It's likely an old favorite of Nia's, since she's spent the majority of her life in Gormott and has visited Torigoth before.
Snowbaby Potato Salad, on the other hand, doesn't seem like it's something she would've encountered at all before the events of the main story. It's an item you have to unlock at Corcaja Greengrocers in Leftheria, via a merc mission where your Blades clear out monsters from a storehouse that's going to be used for storing imported goods from Tantal, which as seen in the story, is an incredibly isolationist country that only starts opening up trade more after the events of chapter 6.
Since it's a salad made from a mix of Tantalese potatoes and other ingredients from Leftheria, I think it's fair to say that the recipe for the dish likely didn't even exist before the proprietor of the shop you buy it from in Fonsett began importing vegetables from Tantal and came up with it.
If I were to guess for why Nia's favorite food item is different in her Blade form: Snowbaby Potato Salad is something Nia probably tries for the first time in chapter 7, while the party is visiting Fonsett and it becomes a new favorite then. You could say that the reason it's tied to her Blade form specifically is because the timing means that it's associated with the memories of accepting who she truly is and all that shit.

Been playing for a month now and I gotta say the game is a blast. But the blade awakening thing keeps me form considering it a 100% nice game. I leave some quests unfinished because I can't roll for a blade that has the field skill required to advance. Or some characters have too many blades that clash from their main role. I have no way to fix this but farm core crystals and roll until I get the skills.
This game has some pretty tight gameplay and it is so fucking fun, but in my opinion the blade awakening mechanic weakens it a liitle.

You equip it on a blade, and that blade's cooldown will be shortened.
Blade switch cooldown, fyi, is how long it takes before you can switch to a different blade in combat. It invokes when battle begins, and when you switch off a blade (i.e. that blade will have a cooldown). You can see it visually as a gold border on their icon that fills up, plus there's a stat on each blade's screen called cooldown/recharge iirc that shows how fast their cooldown is. Higher numbers are better.

Amalthus wanted to go about things his way (start by taking control of the Praetorium and go from there), Malos just wanted to go ahead and destroy everything immediately. The conversation they have when Malos leaves also suggests that there was a disconnect between who they considered "unworthy" - with Malos putting all humans, including the Praetorium and its believers, in that category and Amalthus being more reluctant to do that.
Ultimately, what Malos wanted was the result of how Amalthus really felt about the world, deep down, but at that point he wasn't willing to actually admit it.

The '10 months' number was in response to question from Harada about how long it takes for them to complete a certain stage of development, and the 3 years number was for the overall development length (including those ten months). It has nothing to do with how far along the latest Xenoblade is.
