Only playing safe gets you nowhere. That is, waiting for a reasonable hand to push and betatoring on weak hands and or slow hands. Just get tsumo'd to death or stuck in 3rd. I just started to call more, like crazy, and started coming back even from dead last after taking big risks. kanned like crazy one round and pulled a baiman out of my ass when it should have never worked according to probabilities. Oftentimes, cats have hands that should just not have worked but now I'm seeing it doesnt matter and all you must open your hand to win or die from the shit hands you're given.

Luck is a skill you practice. Yes, you heard me, luck is a skill that can be gained through practice – or so says anime. If you watch any mahjong anime, you’ll quickly learn that luck is a stream which flows from player to player and if read correctly, can be used to gain the upper hand.
The game is much more than just lucking out and drawing the right tiles. Bluffing is a major component, and especially in Riichi mahjong where you can bet extra points which indicates that your hand is near completion. Because it is possible to win off of other players’ discards, it’s important to have an idea for what the other players are trying to accomplish in the game. Not only that, but if a player wins off of another player’s discard, they are responsible for paying them the points for that hand. Pretty dangerous if their hand is a yakuman. This vigilance goes hand in hand with card counting (or tile counting) as it is the best way to stay out of trouble. It is also a strong factor in this game as there are a limited number of each tile and the discard pile is visible to everyone.
There is a lot more so say about the game and the specific rules but in the end you should practice and to get into beginners guides.

Everyone takes turns drawing one tile and discarding one from a hand of 13. The goal is what said. The 14th tile must be one you either draw, or someone else discarded. What patterns or suits you have when you win is what decides how many points it is.

It's hard to explain, but it's kinda like when poker players start shuffling their chips around. It's one of those things that you pick up if you're someone who fiddles with shit in front of you after you've played enough live games.
It's easier than it looks to avoid knocking over tiles, but not as easy as it is to do it and make it look smooth.

I don't think "Pair Wait" is the proper translation you want. Pair Wait is commonly used as a translation to shanpon, or also Dual Pair Wait. The common translation for a Tanki wait is "Single Wait".

Penchan is commonly translated as an Edge wait, so that's fine. Kanchan is normally translated as "Closed wait", but I kinda like the catch name of Gap Wait, so that's also fine.
As for your technical question, yes, technically they are waiting on a single tile, but waits are usually described by the shape of the waiting set rather than what is actually being waited for. Which is why Tanki wait is a Single wait, because the shape is a single tile waiting to become a pair.
It's just 25 always. It's super dumb. It actually has its own special section just for it on almost all charts.

It is in most rulesets, and usually that spot is full of "N/A", but it's not hard to calculate, and very rarely some places allow open pinfu as an optional rule, but I haven't seen or heard of a place actually allowing that, especially in the last 20 years.

open "pinfu" isn't a yaku. it's a term used to refer to open hands with no triplets, no two-sided wait and a valueless pair. i believe open tanyao without triplets is an example of an "open pinfu".
