It's a throwback to when people sometimes mapped out dungeons on a piece of paper so they wouldn't get lost, only it's intentionally baked into the game. You have to feel a thrill in charting the uncharted, exploring every nook and cranny until you know the layout like the back of your hand. Looking back on a dungeon and seeing that you charted that map, that no one gave you shit and you did it all on your own, is its own reward.

I've only really done that twice and kind of enjoyed it both times.
Once for Legend of Grimrock which I imagine is much shorter than any Etrian Odyssey game.
The other time was in WoW strangely enough when doing the cryptic bullshit for the Lucid Nightmare mount.
Seeing that Etrian Odyssey actually incorporates the drawing out of the map into the game actually makes it seem absurdly dumb.
I've played some other Japanese blobbers, but they at least have the common courtesy of auto-filling the map.

drawing your own map or making notes in-game has several perks. Most notably that you don't have to walk on every tile to fill out maps completely and that you can easily note down useful info for later without needing paper.
Also, when you succeed in mapping a tricky floor like EO2's 29F using your wits it's quite a dopamine hit.

Map making is the best part. You can hold the stylus in one place and have the line draw itself as you advance. You can also look around the scenery and predict how the rest of the map will look. It's very dynamic once you understand the visual ques.
