They design games as product, designed to appeal to "everyone" so as to draw the biggest profit possible and not as a standalone experience that is worthwhile on it's own merits.
When they were good they did the same thing but the required manpower/time to make something that was both product and enjoyable in it's own right was easier. Now the budgets and time required for AAA development are so monumental that they have no choice but to churn out highly polished garbage to cast the widest net possible.
