Willpower only affects the ghoul who actively goes against their master. The emotions are the same, just that low willpower ghouls will bend and go back to being gud boi, while iron-willed ascetic vegans can hold it off and plot against their masters.

In tabletop, there are no rules for willpower on blood bond per se, it's just that if you want to act against the regnant, you must roll willpower just to be able to do it.

You can trade, intimidate, sip from sleepers etc.
Blood binding is harmless at first level, weak at second and only turns into slavery with third drink.

In V5, you can easily wait it out too. You lose 1 level per month, so you could easily alternate between two vamps and never get bound to either of them.
