Yes, that's actually one of the first things Aonuma revealed about the game back in 2014, he said they had horse AI programmed so that they'd automatically avoid obstacles. If you stay on a path and start riding a horse, they'll keep following it while avoiding obstacles without you needing to touch the control stick at all. You can pretty much get from one end of the world to the other.
It's for firing arrows on the move. The horse also fights you if it doesn't trust you. Alright mechanic IMO.
Because a horse is a living creature with a mind of its own. Its not a car or a bike. A horse can see and avoid obstacles abd follow paths on its own because it is alive. Also, why are you complaining about this like a bad thing? You can still manually steer the horse if you want and theres a fucking motorcycle in the game too.

It only activates after a while if you're riding on a marked path without touching the control stick, it's not going to happen by accident nor can it mess up what you're doing.

Skyrim did it best. Hold up to make the horse go, and control the direction with the camera. Nice and relaxing, but just enough stimulation to be enjoyable.
