Do it, be a flex support. Mercy is not bad, but she's not applicable in every situation either.
Learn to play Moira/Zen/Ana will help if you are unprotected as support for example, and to give the team more damage if needed.
I like to play Mercy a lot, she's my most played over 300 hours, but she definitely isn't good to one-trick. I reached low diamond only by playing other supports (and other roles if needed).

95% of the problem in gold/plat trash league is players sucking and having no idea how to play the game, and rarely to do with picks.
So you should tell your boyfriend to suck a cock and score a gold medal in that too, because that helps him win the game as much as his obsession with the gold damage medal he gets by repeatedly splitting spawn by holding W+m1 1v6 like its some kind of fucking railshooter, or any of the other hundred problems you subhuman overwatch players fail to realize you're doing because overwatch itself has a piss-poor feedback loop to let you know you fucked up. Also has HAHA HAPPY BUTTONS to make you think you did relevant shit at all with a double or triple kill, when its yet another meaningless, irrelevant piss into the pool of your gradual loss.

If aim is hard, go with Moira then. She doesn't require aiming like Ana/Zen, just gotta keep the pointer close to your target. Moira is pretty good for climbing to plat, though you may find her less viable by mid to high diamond.
She's really good for shutting down flankers like tracer, genji, sombra, and for getting that extra bit of damage for finishing blows during team fights with her orbs. Plus her ult can melt squishies easily and offer good burst healing if a tank like winston or a rein charges in.
Be smart with how you conserve and use the heal reserves though. Zen's heal has no cooldowns so they'll work well together as he will fill in for heals when you're recharging. Also careful not to focus more on dmg dealing than healing in teamfights, many Moiras end up that way.
Some basic aiming tips though are to strafe around while you shoot, rather than jumping to avoid attacks. Generally stay around corners when you're shooting, to duck for cover when low on HP. It helps to have some basic evading and damaging knowledge like this even if you don't play DPS.
Play some Ana in casual modes like arcade or qp to get a hang on her and on aiming if you like. She doesn't require perfect aim, so don't feel pressure as if you're playing a DPS.
Also, Lucio is always viable at every level, so he's another good choice to learn - And he's not hard at all.

Think things like bastion on defense, sometimes people go double shield just to protect him, the ability of being able to damage boost and undo the enemies essential pick make her perfect for situations like that. Another one is if you have your Widow or Hanzo up against another sniper, if they lose the 1v1, and your team is there to protect you, you can undo that outcome and make things even again
