I've played the DS games and most of the other mainline Kirby games. Star Allies appeals to me for its post-game and combat mechanics. SA's movement and attacks are snappier and have more momentum than the 3DS games or KSSU; it's reminiscent of Squeak Squad's oddly fluid movement but with beyond KSSU-sized movesets per ability. The example I use is how each ability's run+jump move maintains some momentum during the attack and keeps the jump's momentum after the attack, while also having infinite uses until you land (grab Beam and just run-then-jump off a cliff and start hitting Attack over and over while holding forward, you'll feel it).

The main game is incredibly easy and about 6 hours, but it has its charm as well as fantastic music and the best raw graphical fidelity in the series. The post-game has a ton of replay value between each Dream Friend's unique Guest Star path, running Guest Star with a couple helpers as well, running Soul Melter, going for the True Ending and then 100% on HiAD (which has much better and more challenging puzzle/combat room design than the main game plus harder bosses), and then Soul Melter EX. Sure, certain team comps can cheese those, but I find solo runs and weapon+1 element helper runs decently challenging. Not to mention almost every ability is fun to play and every Dream Friend even more so. Magalor's setup-oriented playstyle is really fun to experiment with in particular.

I just feel like I'm not good enough at these games for the shit I've vaguely heard about the differences in combat between them to matter to me, which seems to be the main complaint.
I do like some things from the first more like the huge boss fights and the gloomier atmosphere, not to mention Fly me to the Moon is sick, but overall I just like playing the second way more between the weapons, and just being flat out much better at the second game. I'm not done with either game by any means though, so who knows.
Nah, looks fine to me. HGSS was fun, and I liked how in MKDS everyone kinda had their own kart which I don't think any of the others ever really did, and Mission Mode was neat too.
