Beating Ganon wasn't saving the world, it was avenging it. The world was still destroyed by his evil within the seven year timespan it took for Link to come back and kill him.

Yeah, but then it led to an age of prosperity and shit until Ganon came back and the goddesses had to flood everything.

It saved the world, as Ganon had only conquered Hyrule in that time. Ganon's real goal was to conquer the entire world and he wanted to make it more convenient by using the Triforce.

Honestly I don't mind. How many games are actually about avenging things instead of saving them? Without pulling a "if you kill him you'll be just like him" or any of that backpedalling bullshit I mean.

So, why was Ganondorf’s end game in OoT to take over Hyrule castle wipe out the populace and rule over zombies?

He also committed genocide against the Zoras (and succeded).

That's debatable. We see the Zoras in the credits, where we also find out that Zora's Domain ended up thawing.
It wouldn't be surprising if some Zoras didn't survive though.
