yes but you can still defeat them, for example lets say the chosen undead wants you dead, so you fight him and lucky you! you've killed him, but then later that day he comes back again and he keeps on doing that too you're dead or out of his way.
but with the way the old hunter is in this time dream loop like that shit out of groundhog day, he literally cant loose a fight.

doomguy would probably have the determination to find his source of immortality but even that wouldnt really stop the chosen undead because he would be able to find some solution such as a bow or a shield that could eventually get past doom guys arsenal. keep in mind he could just run doomguys ammo out or wait until doomguy has to eventually leave his world to gear up since doomguy has to eat or sleep

I understand why people like these games (I do too) but how do people get into the lore? You might learn something about a particular boss but you'll never get any sort of satisfying ending out of it.

The ambiguity and loose threads are exactly why I like the Souls series, too many fantasy games and series go all out with details to the point where nothing feels mysterious anymore

Wrong. Kuro isn't immortal either, and the story blatantly says that no one but the dragon itself is truly immortal. No one knows how it would work against anything else because it doesn't have much information.
I'm just gonna blog for a minute, and feel free to correct me if im wrong, but;
the hunter is bound by waking up. He's not really immortal outside of the dream, like you can kill him, but every time he dies in game the world resets because the whole game is kind of his eldrich induced fever dream. He can't die because he's stuck in the dream, but he also can't fully wake up because he's caught by some old ones or some shit.
I always kind of imagined dark souls to be more like their timeline is stuck in a cycle, so every time you die, the rest of time plays out until it starts again at the beginning of the curse or some shit. When you're bound to the bonfire your soul/flame/humanity gets to keep its power? The game is about you changing the timeline slightly with every cycle. Most people with the curse go insane and become demons.
In Sekiro, isn't it more like he has super regeneration when he dies, so time keeps on going, and the whole idol thing is just more of a gameplay mechanic?
Demon's souls had your soul bound to the nexus, and every time you die your soul gets sucked back to it. It can use the magic in greater demons to make you a new body too. In the time you're gone the demon whose souls are in question regenerates his army of undead minions. For some reason this one always felt the most sensical.
