They're decent fighters with buffs that make them into gods. If you dual or multi, they'll be even better. Mostly just like in NWN.
As for the the weapon restrictions, not without mods or the thief UAI.

FIghter/mage is objectively better since you get to use time stop.
I remember playing for the first time as dwarf Berserker and also having Korgan in the party. During the last fight everyone in the party was dying. Over and over again. Two unstoppable dwarves survived everything.
Wild mage is fun
Fighter/Thief or Mage/Thief multi-class. Traps instakill anything. If you have two thieves who can set traps, you'll never lose a boss battle twice (usually).
What's the maximum number of companions you want for a F/M/T, for them to get level 9 spells at a reasonable point in the game?
I'm pretty sure people have solo'd the game with every class.

There is no need to get rid of weapon restriction the best weapons in bg2 are blunt weapons (flail of ages + hammer that gives you 25 strenght )
Monk is weak at first but turns full magikarp once you get past level 9 and start building resistances, all you need is someone to spam dispel magic for the occasional lich battle where the fucker spams weapon immunity.
t.4 attacks a round/83% magic resistance/instaheal ability/perma haste/buttload of random immunities covering 99% of shit in the game

Depends on what sort of party you'll play with. And if you're using the "old classic" mods + fixes, or not. If so, I'd say a Half-Orc Berserker was one of my best. It was the best tank and the best hard-hitter I had in my party, thanks to 20+ STR & CON at the start of BG2 already.
Berserker literally breaks the game from start to finish. Ignore all other suggestions.
Dual-class, you meant. Multi-class from 2nd edition sucked bad. All the multi-classes from BG2 were pretty weak compared to the other companions, only in BG1 they were somewhat good.
Don't monk fists cap at +3 or something? How do you deal with encounters that are immune to anything below +4?
Great if you plan to have a good/neutral cleric and party. Otherwise, an evil cleric MC was just a waste of time. There's Viconia for that.

You use quivering palm and one shot the bastard, if that doesn't work get one of your magesluts to blast him with weakness to magical weapons.

It was great to solo as a dual-classing human Kensai/Mage, or also to solo as a Sorcerer (this was actually way more challenging, even with all the spell-related cheese I had)
Berserker.
Berserker Rage makes you immune to practically all game-ending and annoying shit the game can throw at you with one button, except for instakills. It removes the need to trial & error your way through the game and memorize what spells mages cast in what order or spend a minute buffing your party before each encounter that has a spellcaster.
Also dual wield for 5 attacks per round and 10 with improved haste, get some hardiness HLA and rest in critical strike for guaranteed 10 hits every round. One dual- or multiclassed mage as imp. haste and breach buffbitch for your melee rapetrain and off you go.
Sorcerer is OP fuck since their big limitation of only learning a few spells is negated by the games having a small spell list anyway. The real downside is that they can't dual or multi.

Soloing as a monk from level 1 to max is only realy a bitch the first few levels.
Kiting shit with a sling is not all that fun.

Pretty boring. Destroying undead is cool, but their spellist sucks ass - Command is the only actually fun thing they have.
Druids are better divine casters, even if their ealrly level spells are pretty much worthless.
f/m multiclass is good. Whether Dual vs Multi is better is a fun debate for autists but claiming the multi isn't good is just silly.
f/m can wear the Amulet of Power for always-on negative plane protection. Plain fighter can't. F/m has access to self-buffs like blur, mirror image, eventually protection from magic weapons.

Clerics don't need Crom Fehyr. They have plenty of spells to get 25 str.
But if you don't buy the enhanced edition, you have to mod it for normal movement speed. Unless you like waiting for minutes on end every time you walk from place to place in a town. You will need to play Gameboy or something while you wait for your party to gather.

Shapeshifter with the tweak mod fucking rapes everything you throw at it.
my general recommendation is to try starting with one but if you don't like it, skip to BG2 to see if that is more to your liking.
kensai/mage breaks the game pretty easily with very little outside knowledge required
BG2 in general is very much a magefest game
I am pretty sure Imoen had a blast with that party.

i had a sorcerer that i used to defeat the final boss in throne of bhaal by casting timestop,then stacking all my greatest damage dealing spells on her and then casting greater wish to summon the djinn who restored all my casts if i answered his question correctly. I chained this multiple times, it was cheese, but it was the only way i could defeat it on my first playthrough with my woefully undergeared and badly skilled party.
Try Wizard Slayer/Wizard. You can't get more schizofrenic than that.
Is berserker Fun™ right from lvl 1 if I play with Baldur's Gate trilogy mod (or whatever is the most popular way to combine BG1+2 nowadays).
