They aren't used for gaming, mainly cpu intensive work. They are also significantly cheaper, higher quality, and have nicer keyboards than new laptops. Just put an ssd, more ram, and put some new thermal paste/pads and it'll run great.

This. The biggest upgrade to speed of any laptop is primarily going to be converting the HDD to SSD, but the drives they use are better RPM than most laptops. It shouldn't feel sluggish out of the box-- what are you trying to do with it?

It's a refurbished one so it's not exactly out of the box but I've never really done anything with it since even just browsing the web on it seems to run slow. I can't remember what the ram speed is but I think its got 8gb so the SSD is probably my best option.

It really is. SSDs are the shit and are absolutely worth the extra cash. The real question is "how big?" I've got a 1TB in my gaming machine and a 250GB M2 (it was my only option, don't judge) in my laptop. The laptop is mainly a convenience machine and I've never put more than 200GB on any laptop I've ever owned.
Also, Windows 10 was never meant to run on a 5400RPM drive. They're the absolute worst.

Have you never used a computer with dual monitors? You don't even need two widescreen ones. I run a 4:3 as my secondary (and as a benefit can use it for older games or software which doesn't like widescreen) and it's probably the single biggest productivity increase you can make. It's only sometimes eclipsed by people using vertical monitor setups for specific tasks. What you should be asking is why anyone would want to subject themselves to using a laptop as their sole home machine or using a keyboard without a numpad.
