Why is Dark Souls so obsessed with this series?

Fantasy elements, at least up until Falconia, were used somewhat sparingly, painting a more realistic world. If fantasy elements were used, they wouldn't overwhelm the story. Their inclusion implied the existence of a fantastical underworld unknown to man, and those who came into contact with that typically didn't survive long enough to spread more than rumors.

I've read the entirety of the Berserk manga and there are only about five things in it reminiscent of the Souls series.

Miyazaki has said before that a much bigger influence on his fantasy games is Fighting Fantasy.

Never really got the dreaminess and the Medieval-mythological feel of DS in Berserk. Sure the 90s anime was dreamy, but it was a different type of dreamy. DS takes as much out of medieval literature than it does out of Berserk.

The anime is the best adaption and it has some really nice background scenes with the Hawks it's easy to skim over in the manga
Once you finish it take a break, watch the movies and then the CLANG adaptation, then read the 3 chapters that came out in the last 3 years

Vanillaware makes good fantasy games, and whats more George Kamitani is one of the only game directors who actually designs the characters that go into his games. I like how different the games look compared to everything else as well, i've never even heard of a Berserk comparison levied at them.

In my honest opinion the criticisms of Berserk plagiarism are justified when it comes to dark souls and bloodborne as the themes and motifs are lifted straight from the manga.

Demons Souls is 100% undeniably inspired by Berserk, and Dark Souls takes aspects of Demons Souls (alpng with its other inspirations) which makes it inherently influenced significantly by Berserk as well, even if more indirectly than Demons Souls.
