The PC version is the definitive version - for the boosters if nothing else. You will want to use the boosters. There are half decent mods for it too and you can replace textures quite easily.
Switch version is literally the exact same as the PS4 version in docked mode.
Xbone is slightly better than PS4 in terms of graphics so if you're locked to those systems and will literally never ever buy another system and hate steam.
If you want the "Authentic experience" then go with PS2 via PCSX2 because at least you can speed that fucker up there. There are almost no glitches as FFX is what the PCSX2 dev team used to benchmark the performance back in the day.

I've done retarded challenges like NSGNONSNCNBBNENNE where you gimp yourself, I imported the japanese physical copy of the switch version AND preordered the digital US switch version before it was released (japan copy arrived first.) I have 100% on both PS4 and PC. 300 hours on PC. 160 hours on switch. 100%'d again on Vita but didnt get achievements because hacked vita. Fucking trust me. The PC is definitive.

Yes, and it is the easiest version to can mix and match voices/subs (with a mod.) There are undub rips for vita and PS2 too. I haven't really looked too deeply for any others.
On switch you have to set your system setting to japanese to play in japanese, for instance. My japanese copy just played in english.
