The most FUN I've had in a stealth game was Dishonored, although it isn't necessarily a stealth game since you can can just kill everyone.
I think it's the fact that it gives you the option. My first playthrough was fun as fuck because I made sure to not kill ANY of the grunts, only the kingpins and the literal assassins gunning for me.
The blink/teleport mechanic is rad as fuck and it's really fun to find new ways to navigate the levels using it.
