Proteins aren't just muscles you know. They are built from these tiny pieces called amino acids which can be arranged in myriad different ways, resulting stuff like hair, spider silk, snake venom, molecules cells use to upkeep your neuronal signals, molecules that allow cells identify other cells... Life just doesn't work without proteins.

Red blood cells might be an exception though as they have no nucleus, but that doesn't necessarily mean they don't do protein synthesis.

Proteins do practically everything in your body, either directly or indirectly.
To include some very vital proteins there are these attachment proteins which makes sure your skin cells (and actually every cell excluding blood cells) stay in place so that they don't move into wrong places, get blown away by wind or some shit; all your sense receptors are made out of proteins; many enzymes are made out of just proteins, such as those which allow you to digest food.
