Most of them are worth playing. Play Super Star Saga first.
Personally I would say only SSS is.
Only Super Star Saga and Bowser’s Inside Story. I do not recommend Paper Jam one bit.
Don't play Paper Jam. Other than that you can find BiS and PiT in the used DS games section of your local GameStop if you're lucky, then get SSS on the Wii U (if you happen to have one). Dream Team is also okay, but if you can avoid paying $40 for it then go for it.

What's wrong with Paper Jam?
Do Dream Team first since it has the slowest start and teaches you everything you'll need to know, but after that it becomes the best game in the series after the prologue. Then play the rest in the order SuperStar Saga 3ds> Partners in Time> Bowsers Inside Story 3ds
There's also Paper Jam. It has the best combat , but lacks interesting environments and characters. You can play this one whenever
Partners in Time is great, awesome story. SSS is overrated, the 3ds ones are meh
They're alright. Comes with an extra story mode called Minion Quest for SSS and Bowser Jr's Journey for BiS. They're like tactical planning mini-games (think Fire Emblem) but it's the AI auto-does stuff and you have little input. Don't play those modes unless you're curious about them. Rest of the remake is mostly the same as the original.
Potential for many new characters but due to executive meddling we only get the most bland and flavorless Mario RPG of all time. There's a few cool things about it like the music (and even that's less par than usual) and the battle cards which have different effects in battle but I've only played it once. Even Dream Team got me to play the whole thing twice tutorials that last for an eternity and all.
They're okay but you'll miss out on much more expressive and unique artwork
All of them are worth playing, except the remakes, unless you're a fan.
Paper jam was unironically good though, i loved the card system and combat over most other mario and luigis
I never got this, the animations in the 3ds remakes are very faithful for the most part aside from a few minor changes. Of course I prefer the original GBA sprite art in superstar but the remake keeps the same motions with minor changes. As for the character redesigns my only major complaint is the koopas on the koopa cruiser not having their winter coats.
But for BiS everything is near identical because the style is a lot closer to the 3ds games. Either way I don't think you could go wrong with either versions
This but I also liked the how the overworld abilities were more platform-y. It reminded me a bit of playing SM64 DS.
The toad hunts everyone complains about also were varied. I didn't find them boring, though they did interrupt gameplay. This was apparently intentional as the team wanted them game to feel like "a festival" (Whatever the heck that means).
The biggest bad thing about PJ is that ITS A FREAKING PAPER MARIO AND M&L CROSSOVER, THE MISSED POTENTIAL.

Superstar Saga is the only one worth playing, Bowser's Inside Story is horribly overrated. Partners in Time is kinda decent but still doesn't live up to Superstar Saga
Didn't play the BIS remake but the SS remake isn't as good as the original. From an aesthetic standpoint, the GBA version was way more unique and the 3DS version is super homogenized to look more like the rest of the Mario series, down to redesigning enemies to look more like generic Mario enemies. The gameplay is kinda fucked up too, especially switching abilities in the field (which is now touch-screen based unless you want to cycle through every single ability, where as in the original everything was organized and you just had to press L or R to switch to your ability)
Anyway I will say that outside of the M&L series, Paper Mario 64 and Paper Mario: The Thousand Year Door are great games, as is Super Mario RPG
Yeah. Whether they're better than the original is entirely subjetive though, so you might wanna give both versions a peek before choosing one

Me and my sister played Bowser's Inside Story for years and have several game files on it.
I wish I could get her to play the legendaryness of what TTYD was, but maybe in another lifetime.
I really like Brothers in Time but others say it's weak or even bad compared to the others

I enjoyed it a lot too.
I feel like its gets more shit than it deserves.
