I just replayed the originals and also looked at gameplay videos from Reignited. Besides the dragon designs and Dr. Shemp it looks awful. Mobile tier UI font, skyboxes that weren't designed with color theory in mind, redesigns that aren't even remotely close to either the original models or concept art (or are otherwise hideous), just no thank you.
Elora has to be one of the worst offenders, she had a relatively human face with some goat characteristics like the nose and ears, for the remake they just went full retard.

Yeah. You're kinda exaggerating shit a bit though. You encounter an NPC maybe once every few minutes, and you can skip their dialogue by button mashing. The original had the same exact shit. You touch a dragon every 20 seconds, who then proceeds to dispense a gameplay hint lasting another 15 seconds unless you mash a button and skip the dialogue.
