Borderlands, though it makes less sense in 2 considering the New-U stations are owned by the guy who is trying to kill you and everyone else on the planet.
There is even a quest where Handsome Jack pays you to kill yourself but that means it makes even less sense.

EvE online, your consciousness gets transferred into a clone of your body once you die.
Crackdown and Destroy All Humans have you play as clones, so when you die, you respawn as a new clone.
Characters and npcs have referenced them and how they work though, it doesn't make sense.

Katana Zero's protagonist has precognition so deaths are treated as possible futures that didn't actually happen.
Planescape Torment's TNO is immortal and canonically just resurrects after each death. You can use it to your advantage in some quests as well.
There's also several games with a "it's just a dream / simulation lmao" settings so they can easily justify death in canon.
