you might need some win10 patches for the early games but its in the touhou wiki so its no too hard to find
4 [requires an emulator], 8 and 10. These are the titles with the gentlest learning curves and are great to cut your teeth on.

10 feels the most like a Touhou. Take this one if you want to get a feel for the atmosphere and style. It has the most simple mechanics too. Shoot, dodge shit, collect items.
8 has a rather complex mechanic but you can safely ignore it. One of the more forgiving, with a long deathbomb window and easy patterns.
If you're already into shmups, go with 11. It has a nice balance of complexity and difficulty without getting too cute with its mechanics.

They are for PC-98 and has different graphics and separate storyline. You can play them with emulator.

Start with Hisoutensoku. Maybe dabble in the non-mainline games like Shoot the Bullet and Impossible Spell Card - then go to fan-made ones like Rhythm Carnival, Labyrinth, and Genius of Sappheiros.
You look at the entire pattern first then the close surrounding of your player.
I honestly have no problems with Yuyuko, Youmu, and her non spellcards, however, are a different matter.

if you don't give a shit about the ""story"" of Touhou, any of them. If you care about the ""story"" of Touhou start with PCB, you're gonna learn quickly that despite EoSD's presence, everything related to SDM is never expanded on. All you get out of EoSD is Cirno, Sakuya, and Remilla exist.

I think UFO(12) is the best starter. It's got a nice palate, fun bosses, a fairly clear gimmick mechanic, and curvy lasers.
If you want the easiest to clear, choose Imperishable Night (8)

They ARE easier than they look. I'm a total beginner, and I started around a week or two ago with EoSD, and I can already get to the final boss. Of course, there's still a long way to go
for example, most of those bullets don't go near the player at all. You have to figure out how to dodge the ones that will, but obviously it looks more overbearing than it is.
They really are easier than they look. Your hitbox is really quite small, and most things can be dodged using simple movements.

They're hard but satisfying. The addiction comes from dying and realizing that you could have dodged that, thus pushing you to try again
because you are allowed to make mistakes. Also Touhou (like a good chunk of shmups) can be beaten without firing a single bullet or bomb. It is literally entire focus is on not getting hit and pattern recognition (not memorization by the way, good luck trying to beat a shmup on pure memorization when you can't execute shit)
For Touhou, yes. The bullets filling the screen could look intimidating but in the end you only need to dodge few bullets and find a safe space through the bullet maze.
People call it more akin to puzzle game for a reason.
