The 30% thing baffles me as a sticking point. I work in an entertainment industry as well and get my product into the marketplace through a distributor. Their cut of all sales, physical or digital, is 30%. This is not Steam being big bad greedy, this is a standard distribution cut.

The iphone is their intellectural property. They also wrote the operating system that the phone runs on and host all of the apps on their appstore. They provide developer tools and a payment system and other things you can seamlessly integrate into your app when you publish on iOS.
Compare that to something like Steam which is literally just a storefront. It's digital DRM on the PC, when the PC has had ways to share games for free since the 80s. Why in the fuck should anybody give 30% to a store just for the privilege of being listed with the millions of other shovelware titles when you can distribute you game for free.
The PC doesn't need a storefront. It isn't controlled by a company like Apple.

The few people that ARE left to actually work on the store have to divide their time between adding games, making sure the store is actually running properly, and actually updating it.

Epic is in a tough competition against a juggernaut that borders on monopoly status (I'm not saying it is a monopoly, because it's not) with a 150 million installed base and a consumer culture that can be likened to a cult, what with their worship of the Valve CEO as some sort of meme deity. I would compare Valve to Apple in that regard and I think Gabe Newel's reality distortion field is more warping than anything Steve Jobs could have dreamed of. It's going to be a difficult path, but Epic is not going to back down.
They're in it for the long haul one could say. I suspect that in several years, PC gamers will have totally forgotten about these Launcher Wars similar to how we forgot about Valve forcing everyone to install their digital distribution and DRM platform that required an Internet connection if they wanted to play a single-player game called Half-Life 2. Valve is going to continue to double-down on Linux gaming and VR and keep shirking any quality control responsibility while taking significantly more money from publishers than their competition does. That's cool and it's their prerogative and their money. They can cater to the 0.8% and 0.9% of PC gamers who like those things. Let's say you can put your $1 game on a store with a 10% cut that gets 1K sales, or a store with a 30% cut that gets 2K sales. You make $900 from the 1st store, or $1400 from the 2nd store. Devs ALREADY use Steam because it's the widest reaching and most popular platform, peaking at over 15M concurrent users and 5M actively playing users. Players use Steam because it comes with fuckloads of minor benefits, a simple userface with many options, and it has the features people want, like, let's say, the ability to buy multiple games at once without getting fucking banned from your game purchasing platform, let alone the ability to buy multiple games at once period.
If Epic had every single feature Steam had, maybe it could try to catch up, but devs would still be weary about jumping to Epic because players aren't jumping yet. Epic could offer games with a 5% cut and still not get devs to work with them if consumers won't buy from Epic to begin with, mongoloid.

Epic takes less than 30% and as a result offers a barebones experience that doesn't cost them as much to run. Akamai is used for game downloads as well. You can see Steam connect to their servers to download games from them if you monitor the network activity. Valve does not own and operate their own CDN. They are the client to several providers like Comcast and Level 3 as well as Akamai for their various services. This Valve Network thing is just software on their end for developers to make use of their setup.
