That sounds nice, but Daggerfall was buggy as shit because it was so massive, and that size didn't really even matter outside of quest timers because you would just fast travel around unless you're the kind of masochist who walks to Daggerfall first thing for fun. Not to mention that Daggerfall had the same questing problems that later Elder Scrolls games had, where it was just the same quest repeated over and over again at differently named but thematically similar dungeons (guilds were especially bad about this, fuck them). Morrowind hit the perfect size in combination with depth IMO.

i guess you could argue towns and dungeons are "hand-crafted" in that someone took the copy/paste setpieces and arranged them in slightly different ways but the term hand-crafted implies far more effort.

the franchise was pretty much dead though, if it wasnt for Todd and Morrowinds success TES would have died with Daggerfal, hell Bethesda would have failed as well. Keep in mind that Morrowind was pretty much a desperate last push for the whole team
