Don't get Sekiro then. It's very traditional JP environments, and there's a LOT of "running around on Tiled jp rooftop". It's a great game, but based on your post of despising Nioh's environment, you would not like Sekiro's.
Sekiro does have a couple outstandingly cool environs (Fountainhead Palace as an example), but it's mostly mountains and JP buildings.

That had potential but it was one massive plateau with a lake. I wish it had more mini valley and cliffs in the area.
I respectfully disagree, just on the basis that most of the game was a lot of little cliffs/valleys, and it was a refreshing difference to have a wide-open space that didn't result in walking 10 minutes across empty terrain (e.g. BOTW).
Fountainhead Palace is definitely visually open, but it's still got a more or less required fairly circuitous path (to avoid the ball kicking cunt), and is only "Open" once you've 90% cleared the area (and killed the ball kicking cunt). I feel like the striking visual openness and overall art direction of Fountainhead Palace puts it a good distance above most of the game's art direction.
