Mostly because it wasn't all that great of an RPG to begin with, and an ARPG format with party switching actually opens up a lot of potential when coupled with the materia system. FFVII worked so well because of it's story, cast, and OST, but the actual battle system was nothing special. The materia system even helped accomodate the player's investment in the characters over their functionality in battle, since you could basically have any party member fulfill a designated role if you equipped them right. It was better than the job system, but an ARPG ensures that each party member contributes an entirely different style and approach to combat that is further differentiated by how you equip them.

It's easily the biggest remake of all time. It has to cater to an entire planet. As it stands the KH secondaries are probably a larger demographic than original fans.

People kept bitching about wanting ultra-realistic graphics. They did it. They're not going to waste those graphics having characters just stand there. You dense fuck.

Party Members only seem to be AI controlled for the "action minigame" that comes along with the new ATB system, but you can still control the "actions that actually matter (including using items)" via the command menue. It'd be great if they could slow time when scrolling through the command menue, that'd make it perfect.

It's the best way not to punish the player for having to scroll through the menue, but at the same time not become an exploit that allows you to just stay inside that menue while pondering over your actions, though to be fair, you could always also do that more or less by simply pausing the game (though the UI would not be usuable in that case).
