Monsters actual power scale a lot with their emotion/will vs the target emotion/will, since they aren't even real but more like a self-sustaining spell.
Azgore don't even sincerely want to kill you, he is doing it out of cowardice because that's easier than admit he is powerless to free his people.

Intention matters. It has nothing to do with what Chara is attacking with, only her intention to kill absolutely every monster in the Underground. That's why upgrading to the knife doesn't really do anything. She kills with pure hatred.

Well it's Genocide-timeline Chara, so the "target's emotion/will" is cranked to 11 - which is why Sans bet everything on dodging : Chara's absolute-edge-psychopathic-murder-hobo mindset pretty much make him a lightsaber against monsters. Chara probably only need weapons because it subconsciously "feel right"-er to have one when you want to hurt people.
Also Undying has the problem that she start to liquefy toward the end of the fight, as a monster spell-body-thing just can't stay stable with that amount of power. Had she won and survived she would have probably formed an amalgamate with whoever else was nearby anyway.
