The super low render distance is really nostalgic to me. I never had a computer capable of running Minecraft with fancy graphics and high render distance. I remember watching YouTubers like Tobuscus and Bananapielord and hoping I could make Minecraft look that nice myself one day. And now I finally can.

I managed to get the original seed for his world using mods, and loaded it in an alpha version of minecraft. It was surreal playing in the original version of his world, but i never saved it and all the downloads of his world required to get the seed are gone

I don't think I really have nostalgia for minecraft because I never really stopped playing. I heard about it when I was around 11 or 12 from both of my "nerd" cousins. They were playing an alpha version IIRC and was honestly my first exposure to PC gaming. I played the 360 version when that released for the longest time, and then jumped to version 1.5 on PC when that came out.
I don't think there was ever a significant amount of time in my life where I wasn't playing Minecraft. Sure I'll take a break for 3 or 4 months, but I'll always come back to it. Whether to check out a new update or play some old alpha version.

Same here, there were only a couple years where I didn't play it with some exceptions. For the last few updates I haven't played them at all, and instead played old mod packs, but I've finally gotten back into vanilla for the newest update to try out the new Village and Ocean stuff.
I forgot how much fun building is once I get into it, the last few years have kinda sucked with me not having any creative outlet.

Not at all, if you like building Minecraft will always have at least some entertainment value. All the survival stuff is just there to make building feel more rewarding and immersive.
The only reason it would be too late to get into Minecraft is if there were specific servers you wanted to play but aren't available anymore.
Minecraft is one of those games that has managed to bridge a generational gap. Fortnite does it to an extent too, but when it hits its own 10 year anniversary, I guarantee at least that most of the older playerbase will have moved on from it. People from kids to boomers all still play Minecraft and enjoy it because of its accessible and addictive concept. It's just pure fun.

I like the survival aspect, can you tame animals or monsters? And is there an endgame?
You can keep lots of animals and breed them, and even set up aquariums for fish. I usually have large fenced in areas where I keep lots of cattle to farm leather, which is useful for books and item frames.
With Minecraft you'll want to have lots of different types of farms for various purposes.
Also you can't tame monsters, but you can use an item tag to keep them from despawning, and keep them as pets, but they'll still try to attack you.
There technically is an end game with defeating the Ender Dragon, but the best way to enjoy the game in my opinion is to have various building projects to keep yourself busy, and all those farms will help you with that.
