Out of what I've played, Project Melee.
The amount of hidden techniques is not only large, but the execution required to pull them out consistently and determining the optimal situations to do so is very demanding. You have to be cognizant of a lot of things at once and be able to think ahead to get to the highest echelon of play.

I doubt 3D was on their mind at all. One of the strengths of the genre is the autistic amount of detail you can stuff into it, so much so that it probably wouldn't be feasible in 3D even if you had a AAA budget.
