you'll be able to enjoy it on it's own but you won't nearly get as much enjoyment as someone who has seen or heard of the events that led up to what you're playing. while there are plenty of side quests that you need little to no background of the Witcher series to enjoy, there almost always tends to be nods to either the previous entries or the books. it's just not the same experience. don't see any reason not to play the previous games since they've all held up pretty damn well, just get a movement speed mod for Witcher 1 and you're golden
