Octopath Traveller does a pretty good job of this if you don't mind the isolated stories.

Romancing saga series is pretty good. I recommend the PS2 remake of the first one, unless you really hate the 3d style.
SaGa might be a bit too much for somebody who wants something minimalist, especially somebody who like FF.

Suikoden 1 is also good and is a direct prequel, but its pretty archaic. S2 still holds up really well today

Well, I can't say I don't like to hear that, but mind you that it's a series on a whole other level compared to the vast majority of JRPGs, and most WRPGs either.
It's not easy to get into it for most people, and the massive wall in terms of mechanical knowledge coupled with the absence of any sort of tutorial makes it hard for newbies to get into it.
I suggest you to start with the DS remakes of 2 and 3, they're linear and easy enough to get accustomed to the very basics in terms of mechanics, with the Romancing games and beyond, the series goes deeper and deeper in the rabbit hole, and you have to deal with nonlinearity, massive casts of characters, fragmented narrative and so on.
They're amazing games, but they tend to filter a lot of people, there's also more or less frequent threads on /vr/ for easing people into the series, so it would be wise to go in there if you have problems or need to ask something.

The Last Remnant, the pc version in particular. It fixes a lot of things wrong about the console versions. Very deep character building system and mechanically interesting squad combat while keeping to its jrpg roots

Just finished playing it yesterday and I found it to be really enjoyable, but really easy. I played it on the PSX and the translation kept me confused throughout the game until I had to search defining plot points to fully understand the context.
If the iOS has a better translation than the original than I'd say go for it, but expect to put in around 50-60 hours, and only do Fort Condor missions that give you equipment.
The first 10 hours (Midgar) is an enjoyable experience, but it's different for a lot of people saying that "the game doesn't start until you leave Midgar".
Oh and a few things, use Sense, and maybe look at a steal guide to get some decent equipment before important battles. And don't worry about making one person a dedicated magic user, as the damage early game is negligable and everyone can use magic effectively.
Enjoy the game, and if it starts to get boring just power through because it gets very interesting near the end of Disc 1 and keeps you hooked until the end.
It's worth a go-through. Materia gets super broken, in particular the blue-magic materia and the Matra Magic spell that delivers cheap, high full-party damage.

I'd say yes, even though 5 is a major upgrade, 4 is still a pretty good game by itself. The game kind of assumes you've played through 3 first but it's mostly from the intro and small references there and there.
Yeah 6 sounds about right. I think I left my game on for hours and saw that I finished Midgar roughly 10 hours in.

I'm not getting in an argument over this but the gist of it is that the average WRPG has pretty wide rules ("You can do anything!") while JRPGs have pretty narrow rules ("This is how the game is played"). When people talk about great customization in JRPGs, they're not talking about WRPG-style customization ("You can do anything") but a customization centered around those strict rules ("This is how the game is played" - but in reality you can break those rules).
In that regard, FF6 does have pretty great customization, not in the way of WRPGs where you can do anything, but specifically in the JRPG way where FF6 actually is a pretty simple game with low amount of customization yet you can still do some setups or builds that completely break the rules.
