Yes, there are even entire heists centered around doing it stealthy otherwise you have a very bad and shitty time. I figured out the perfect john wick game the other day. it's an arcade lightgun rail shooter, but it's also mixed with that fist of the north star arcade game. so you'll be going around, shooting bad guys as they pop up, but then sometimes the paddles will come out and you'll need to karate chop/pistol whip them too. it's completely infeasible, but I think that would be the best way to capture the feeling of wick in a game

Payday 2 is about co-op against AI cops and guards. You can either stealth your way through missions (like bank heists or robberies and such) or you can go in guns blazing and attract more heat. The game is designed around having a lot of different build potentials and lots of customization of weapons, perks, and skills. It also has randomly generated maps and enemy spawns and even loot so it’s always fresh

thats the thing with John Wick 2, the movie is set up like a video game, it has the tutorial at the start which recaps the last movie, kinda like how certain game sequels will recap the last game in the first mission/tutorial. it has the gearing up/ prep phase segment, even showing John preparing weapon drops for later in the "level", supressors work like video game ones where they only alert the target you are shooting at, and not the surrounding npc's. The enemies are mostly faceless mooks with a few minibosses along the way to the objective.

Edge of Tomorrow. The end is crap, but it's great until then.

John Wick is great because it plays to Keanu's strengths. He's great at action and not good at delivering lines. So reticent and sad John Wick works.
