The main games are all SHUMPs (as in full numbers, 6,7,8,9 etc) however there are several official spin offs which are fighting games and experiments with the classic SHUMP formula.
What you saw was a game made by someone else using Touhou characters, likely Super Marisa Land, there are a lot of unofficial games that use ZUNs characters and rearrange his music because he is very lenient towards people using his IP, allowing them to sell it for money even.

I have no clue why but I always attributed my love of shmups starting from a game called Brick Breaker when I was really young. From there on, I got hooked to Raiden in the arcades then at some point I heard about these games and they just looked visually really nice and thrilling to play/finish. Also helps the music is usually really great and the cute girls are a bonus.

The appeal is entirely different depending on whether you're a primary/secondary/tertiary.
The games, while easier than contemporary bullet hells like CAVE shmups, have really elaborate patterns that are more puzzlelike in nature than the average shmup. The music is great, a lot of games have interesting gameplay gimmicks, and there are a lot of memorable characters.
For secondaries, there is a SHITTON of manga, official or otherwise, lots of non-shmup fangames in every genre, the music can of course be listened to by itself outside the games, it's basically an endless content fountain.
Tertiaries are in it for memes and porn, of which there is also an endless supply.
Touhou basically has something for everyone, whether you're casual or hardcore into it.
