The older Fate Stay Night anime is mostly the same story as the newer UBW anime, just really badly told. Don't watch it.

Zero is the prequel, but it spoils large parts of the story, so watch it after UBW.

The UBW movie is yet another older adaptation where they tried to condense the whole UBW route in one single movie. It's superseded by the anime, don't watch it.

There's no barrier to normalfags or casuals to read it. It's just that most people who do get so addicted that they become obsessed after reading the vn. They also happen to be huge weebs because that's the main audience. I usually don't watch anime or read manga, I mostly play videogames, yet I enjoyed reading it a lot. I didn't become obsessed about its universe though. Tsukhime (plus Kagetsu Tohya), Fate/Stay Night, Fate/Zero and Fate/Hollow Ataraxia were enough for me. No other Fate franchise seem interesting enough.

No, the UBW movie came out 5 years before as an attempt to jam the entire second route into a movie. It's done by the studio who did the first route anime (2006) and kind of sucks.

If you want to enjoy Carnival Phantasm to its highest I'd say both it and every part of Tsukihime+Melty Blood are required reading/viewing/playing.

Keep on with deen's fate stay night. If it catches your attention at all by the end, or you're just curious, then advance to the VN. If that doesn't take then try the fate zero anime. If none of that catches your attention, then fate just isn't for you. It takes a while to start getting good, but if you literally finish two anime then it's just not going to click.

The ultimate version should have everything, applied patches included. I've read the vn something like 14 years ago so I'm not 100% sure but from the info I can find everywhere, you can just click on the first route exe and there you go. I don't think you'll find any difficulties.
