I don't know, I really think this is a market that indie titles aren't taking enough advantage of. Some are, but I'd love to see like a proper, DMC style action game made with low poly models and high quality textures.

Everyone and their uncle is doing lowpoly though indie wise at least. Granted it's a plague of shitty effortless nu-lowpoly made by people that jerk off onto their copy of megaman legends daily.
Yes, I've seen them, but they have no effort into an actual art style and most of them just use lightning, over saturation and bloom to cover their absolute lack of textures.
Pic related has less poly count than most low poly Indies and still looks better, even with the hardware limitations of the day

All the execs here are boomers who still think the godfather was the peak of film.
So they make games that lean heavy on borrowing from film and do fuck all about gameplay.
not even just that. start adding in analytics everywhere so see how to extract the most money which to nobodies surprise is by copying gambling and throwing any semblance of gameplay out
low poly seems easy at first, but it's super fucking hard.
And so many people try to capture that PSX feeling without properly studying it.
MML had a great artstyle, but imitators fail at emulating it.
I've only seen a handful of indie games and artists do lowpoly any justice

also to add on toI learned a while back that lowpoly is like 70% textures.
That's one thing these indie devs skip on.
A lot of them are shit at 2D art and think 3D is easier, but it's an entirely different beast.
Especially when trying to emulate PSX aesthetics.
Textures back then were crazy.
MGS for example has so much taken into consideration when it comes to textures.
The lighting, contrast between backgrounds and foregrounds and the technological limitations on top of that are what spawned this kind of aesthetic.

pokemon is the only real game(not indie) I known of that does that.
too bad pokemon kinda sucks and gamefreak is a bad dev.
You know there's something about PS2 rendered foggy urban scener that just oozing with souls, especially Japanese ones. And no I never owned a ps 2 in my childhood, just got into emulator recently.
