Vigor/Vitality are by FAR the most important stats in Soulsborne games.

Literally the number one advice I give to newbies in any Soulsborne is to prioritize the shit out of the HP stat until they've got it at atleast 25-30. The games are INFINITELY easier with high HP and players [especially newbies] seem to misunderstand that damage is mostly governed by weapon upgrades and not character stats. If you start out just cranking Vit/Vig or whatever and focusing on weapon upgrading, you're gonna find things much less frustrating.

It's fine to use a small healthbar if you want to challenge yourself but having a huge health bar is objectively optimal. In dark souls 3, once you hit the break points in your attack stats where the scaling gets really bad, you won't really see much benefit in increasing it. With that in mind, it's smarter to put it into health so you can take 3 hits before dying instead of just 2. This is a large tactical advantage compared to a very small tactical advantage of doing 1% more damage. You can also get a massive health bar with relatively small investment into vig, and for some mysterious reason vigor is the only stat in the game that actually gives you BETTER value per point as it increases before hitting a soft cap, so if you invest AT ALL you want to invest at least until the soft cap for best value. Finally, the last important factor is that there is equipment which gives you bonus health based on your existing health bar, and you can stack them.
Another reason to focus on hitpoints in DS3 is how bad heavy armor is. It doesn't have the poise of DS1 and it doesn't have the defensive properties of DS2, so if you want to make a "tanky" character it's smarter to wear only medium armor and invest points into vig instead of investing heavily in vitality and wearing heavy armor.
