When you say you've played "Modern Platformers," do you mean classic styled modern Platformers or literally just newer games like Mario Odyssey or New SMB?
If you enjoy stuff like Shovel Knight and the like, you might still enjoy these. They're stiff and generally pretty tough but the music, and atmosphere are generally amazing. You'll probably enjoy Castlevania IV and Bloodlines the most out of the collection.
If you played Bloodstained: Curse of the Moon, it's basically a more forgiving Castlevania III.

Bloodstained is currently my only hope and, as good as it looks to me, it's still just...not Castlevania. I think I'll enjoy the shit out of the game, I just know when all is said and done I'll still wish I had a new entry in the original series.
I will only buy it if they do it well. I don't want to send the message that I will pay for a game even if it's executed poorly. I didn't buy Rondo+SOTN, because the retards used the PSP version, which tells me it was a mere cash-grab.

Modern platformers seldom have any actual platforming it seems. Regardless, the controls are a little clunky but the game is challenging and fun. Though I had an nes growing up, I never got to play the classicvanias until a few years ago, and now 1 and 3 are two of my favorite titles on the system. If you like platformers and can adapt to different control schemes you'll probably like it.

I'd love to see another Shanoa game, but even presuming OoE takes place in the early 1800's, having OoE, a hypothetical second game, and then Quincy at tail end of the 1800's would make it feel a bit cramped with Dracula constantly popping up and all, but I guess it'd work.

I'm really hoping it's in a second collection if they do go through with one like they implied. This first collection seems to be going in chronological order so despite being classicvanias, it's specifically classic games up to Bloodlines and nothing beyond it.
Though this has me concerned about whether or not they'd bother putting in Contra Rebirth into the Contra collection. You'd assume so, because that's eight games and there's only so many Contra games, but they already revealed that the collection has the arcade Super Contra and the NES version Super C, and while they haven't revealed the NES version of the original Contra, they already showed the arcade version and I'd be surprised if they didn't pad it with the NES one too.

The series wasn't marked for death. They had multiple teams making more Castlevania games. IGA came in and declared himself the lead of all future Castlevania games (going as far as dictating canon). And Konami just went along with this.
What made Castlevania survive so long before was having half a dozen different teams each making their own game. When one person took over the series, it started stagnating. Sure, lots of people liked the SotN formula. But it wasn't going to last forever. And then IGA went full stupid with the 3D games.

The bosses in DoS sometimes have pretty meager health bars but compensate for this by having obtuse and annoying glyphs that you'll likely screw up at least once, like the Puppetmaster or Lord of the Flies. Removing the Glyph function neuters the challenge of those bosses.

They're going by cartridge releases (1993 rerelease of I instead of the FDS version, too, but not necessarily the USA), and the FC version of III was cartridge based so I don't see why not. The problem is whether it would be needed to buy the japanese version for that or you can just access the ROM through the european one.

Yeah, but suppose you get it on the Switch, where most games are region free and language options can be changed in the console (so, if you get a game in the japanese eshop and has an english language option, you get english): would they put both versions of the game in the file and change access with language or are they making different versions of the collection by region? They aren't hard. The reason SotN is even easier than those is because SotN had some of the most fluid movement in any sprite based game. As well as way more customization options than most other games have. The SotN clones that came after had less options and inferior sprites, which made movement more stiff and slow.
Basically, Alucard could attack three times in air or twice on the ground in less than a second, as well as sliding back or jumping instantly to avoid damage. Soma and the others in the post SotN games take over two seconds just to do one swing. And the cooldown time is even longer, making dodging pointless. You just become an HP sponge. And because of this, the only "difficulty" of the game is doing a little extra leveling to get a little more HP to survive more hits. Otherwise, you just power through enemies/bosses with offensive attacks and no dodging.

And considering the games I mentioned have pratically the same movement you have in SotN, and are harder, they're therefore, harder than SotN by any metric. SotN not only is too easy in terms of enemy and boss patterns, but also in terms of stats and specially ways to break the game. Crissaegrim is broken, Soulsteal is broken, Shield Rod + Medusa Shield is broken, Shield Rod + Alucard Shield is broken, and I'm sure I'm forgetting a few more. And the Shield Rod is really easy to obtain, and Soul Steal is always with you, provided you have enough mana.
