If you want to play a game where you optimize the economic outcome of a farm then skip Stardew Valley. The point of this game is to be comfy and it is good at that, it is a 10 out of 10 at being comfy, that's why it's popular, but it's not a farming optimization game. If you try to bring out your inner jew in Stardew Valley your gameplay will consists of watering a giant square of potato for 5 minutes per day or by playing a fishing minigame 20 times in a row. If you want to release your inner autism at planification then try Factorio.

I like the farming/foraging/mining aspect of the game but I hate all the highschool tier social drama and interacting with all these degenerate NPCs

I wouldn't mind seeing a game with the same formula except you're living alone in the woods with minimum NPC interaction. You could scout the area, build your own wooden cabin and set up a farm, wandering NPCs can visit you for trading but otherwise there's no village to visit everyday.
